Recipe: Detox soup

Nothing beats a nutritious winter warmer. Our detox soup is a great way to feed your body and soul this February, while using up whatever leftover veg you have in your fridge. We’ve shared our favourite ingredients below, but feel free to experiment with whatever veggies you like.  

Ingredients

1 onion, diced

2 celery stalks, diced

2 medium carrots, diced

1 tablespoon of your choice of oil

1 head of broccoli, broken into florets with the stalk peeled and diced

1 knob of fresh ginger, peeled and minced

3 cloves of garlic, minced

½ knob of fresh turmeric, minced (1 teaspoon of turmeric powder works just as well)  

1 vegetable stock cube

1 ½ litres of water

30g of fresh parsley (half a bunch), minced

Salt and pepper to taste

100g of kale, de-stemmed and torn or shredded

Juice from half a lemon

Method

  1. Sauté the onion, carrots, and celery in a large pot with the oil until soft.
  2. Add the broccoli and continue to sauté for two minutes.
  3. Add the garlic, ginger, and fresh turmeric. Sauté for another minute.
  4. Add the water and stock cube. Stir and bring to the boil.
  5. Turn the heat down and allow the soup to simmer for 15 – 20 minutes.
  6. Add the kale, parsley, and lemon juice, before simmering for a final two minutes.
  7. Season with salt and pepper to taste before serving.
