Inspired by this month’s Birmingham Honey Show, we’re sharing a recipe that celebrates one of nature’s sweetest ingredients… honey, specifically hot honey! With recent heatwaves nobody wants to spend too much time in the kitchen, so it’s good to have something that can enhance the flavour of a number of dishes, both hot and cold. This hot honey sauce can be used on salads, cold or fried chicken, pizzas or as a dip with brie and a crusty loaf.

Ingredients:

  • 340g (1 cup) runny honey
  • 2 fresh chillies of your preference (Habanero are good for hot, Serano for medium and Jalapeño for mild or a mix of your choice!)
  • If you prefer to use dried chillies, you can replace the fresh ones with 2 teaspoons of dried chilli or red pepper flakes
  • 1 tablespoon apple cider vinegar

Method:

  1. Add the honey and chillies to a saucepan.
  2. Gently bring the contents to a gentle simmer for 1 – 2 minutes: do not let it boil. Then remove from the heat and stir in the apple cider vinegar.
  3. You can strain to remove the chilli pieces/flakes if desired. The fresh chillies are great to use on a pizza or in a salad. Leave it to cool before transferring to an airtight glass container.
  4. Drizzle and dip to your heart’s content! We like it with whipped feta, fried chicken, on pizzas, with pancakes and bacon, and in salad dressings.
