As the tomatoes are ripening around the Walled Garden, we’ve been searching for a delicious recipe you can try at home with your own harvest. This chilled tomato and apple soup celebrates the wonderfully sweet flavour of freshly ripened, homegrown tomatoes.
Ingredients:
- 450g fresh ripe tomatoes
- 225g white onion
- 450g cooking apples
- 600ml chicken stock
- Salt
- Pepper
- A handful of basil leaves
Method:
- Roughly chop your tomatoes and onion. Peel, core and chop your apples.
- Add these ingredients, along with 600ml of chicken stock and a pinch of salt and pepper, to a large saucepan. Bring to the boil before lowering the heat. Simmer for around 20 minutes.
- Once the onions have softened, take the pan off the heat and purée using a hand blender or food processor. You may wish to add more salt and pepper to taste. For a smooth consistency, sieve the soup to remove tomato skins and any seeds.
- Set to one side until completely cooled. Serve with basil to garnish.
